Redneck Caviar

I have had this dip before, but had completely forgotten about it until Hubby and I attended a friend's birthday bash last weekend. I made it for our 4th of July get-together and it was DEVOURED. One word: amazing.

Note: I don't like blackeyed peas (Fergie's group included, especially after the Super Bowl "performance") but LOVE this recipe.



Ingredients:
1 can blackeye peas
1 can black beans
1 can whole kernel corn
1/2 cup chopped onion
1/2 cup chopped green bell pepper
4 oz diced jalapeno peppers
1 can diced tomatoes, drained
1 cup Italian dressing
1/2 tsp. garlic salt

Directions:
Combine all ingredients and refrigerate for a few hours. I let mine sit overnight to allow all the flavors to marry. Serve with tortilla or corn chips (scoops or rounds hold the chunky ingredients the best).

I used Ken's Lite Northern Italian with Basil & Romano. It's got more flavor than traditional Italian and gave the dip a kick.
